Geranium was PERFECT. There was no dish I didn't enjoy, and service was top form (friendly, engaging, informative & always three steps ahead). One of my most favorite dishes is this Salted Hake (marinated in parsley ash, which mirrored the design of this plate), and then doused with buttermilk speckled with parsley stems and Finnish caviar. Absolutely phenomenal. It is No. 28 on the World's 50 Best List, and it is the first and only restaurant in Denmark to receive 3 Michelin stars.
