The qvervi was how Georgians made wine 8,000 years ago-- and still do today! Grape juice is fermented with the grape skin in this clay pot vessel (the famous qvervi!) buried under the earth. Just to show you how massive the qvevri is, 5 ft.0" tall me could fall in and drown in the wine! PS Since Alaverdi Winery is a monastery, all women are required to be covered up.
